Sun Soaked Dried Tomatoes And Unsun Soaked Dried Tomatoes


Ingredients:

A pound or more of tomatoes of any variety

Cheesecloth or paper towels or a kitchen tile or muslin cloth

Rock salt

A large bowl

Mixing spoon

Parchment paper or wax paper

A cookie sheet

Six to eight cloves of minced garlic

One cup of Cold pressed extra-virgin olive oil or avocado oil

1 teaspoon pink Himalayan sea salt

3 to 4 leaves minced Basil

Sandwich bags

Wash and dry as many tomatoes of at least three or four tomatoes of any variety as a wish.

Core and quarter the tomatoes

Line a colander with a cheesecloth or paper towels or a kitchen towel or muslin town

Place the tomatoes in the colander

Cover with rocksalt

Let the tomatoes sit for about four hours

In a large bowl add one cup Cold pressed extra-virgin olive oil or avocado oil, six to eight cloves of minced garlic, 3 to 4 leaves minced basil, and 1 teaspoon pink Himalayan sea salt

Mix to coat the tomatoes thoroughly and and let rest in the refrigerator overnight

Remove next day

Line the tomatoes on parchment paper on top of a cookie sheet

Make sure eat tomato slice is at least one to 2 inches apart from each other in all directions

Leave out in the sun for a few days covered with the lid making sure to check on them and turn them every other hour or so until they look like raisins

Or preheat the oven to about 110°F checking on them and turning them every 30 minutes or so until they look like raisins

Or place in a dehydrator on its trays or sheets or racks depending on the style of dehydrator checking on them until they look like raisins

Place tomatoes in a sandwich bag in refrigerator or a cooler portion of the pantry and a thin layer of oil of choice maybe one or 2 tablespoons max making sure there is no air in the sandwich bag when placing the tomato slices inside sandwich bag when taking them off of the cookie sheets or dehydrator sheets or trays or racks

Keep bags in the refrigerator on the door or in the cooler side of your pantry in front of you so you don't Forget about them.

Use as quickly as possible because they are so delicious!
